6 bone-in, skin-on chicken thighs
1/2 lemon, juiced
1/3 cup extra virgin olive oil
2 tbsp chopped parsley
1 tbsp honey
Zest of 1 lemon
Spices:
1 tbsp lemon pepper seasoning
1 tsp red pepper flakes
1 tsp garlic powder
1 tsp onion powder
2 tsp salt
1 tsp chicken bouillon seasoning (optional)
Instructions:
In a large bowl, whisk together lemon juice, olive oil, parsley, honey, lemon zest, and all spices.
Add chicken thighs and toss to coat thoroughly. Marinate for at least 30 minutes (or overnight for best flavor).
Preheat oven to 400°F (200°C) or heat a skillet over medium-high.
Bake or sear chicken thighs skin-side down until golden and fully cooked (internal temp 165°F / 74°C).
