Herb-Infused Gluten-Free Flatbread
Ingredients:
– 2 cups gluten-free flour blend
– 1 cup full-fat Greek yogurt
– 2 teaspoons baking powder
– ½ teaspoon salt
– 1 tablespoon dried herbs (such as oregano, thyme, or rosemary)
– Optional: 1–2 tablespoons olive oil for added softness
Instructions:
In a mixing bowl, combine the gluten-free flour, baking powder, salt, and dried herbs. Add the Greek yogurt and mix until a dough forms. If the dough feels dry, add olive oil or a splash of water to bring it together .
Knead the dough gently on a floured surface for 1–2 minutes until smooth . Divide the dough into 6–8 equal portions and roll each portion into a ball.
On a lightly floured surface, roll out each ball into a flatbread about ¼-inch thick .
Heat a non-stick skillet over medium heat. Cook each flatbread for 2–3 minutes per side, or until bubbles form and the surface is lightly browned .
Serve warm as a fragrant and flavorful accompaniment to soups, stews, or dips. Store leftovers in an airtight container for up to 2 days .
