Honey and Nut Butter Oat Cookies

Honey and Nut Butter Oat Cookies

Ingredients:
– 1 cup rolled oats
– ¼ cup honey
– 2 tablespoons almond butter or peanut butter
– 1 large egg
– 1 teaspoon vanilla
– ½ teaspoon baking soda
– ½ teaspoon ground cinnamon
– ¼ teaspoon salt
– ¼ cup chopped nuts (such as almonds, peanuts, or hazelnuts)
– ¼ cup dried fruit (such as cranberries, cherries, or blueberries)
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper .
In a mixing bowl, combine the rolled oats, baking soda, cinnamon, and salt . In a separate bowl, whisk together the honey, almond butter or peanut butter, egg, and vanilla extract .
Gradually add the wet ingredients to the dry ingredients, mixing until well combined . Fold in the chopped nuts and dried fruit .
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart . Flatten each cookie slightly with the back of a spoon .
Bake for 12–15 minutes, or until the edges are golden brown . Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack .
Store in an airtight container at room temperature for up to 5 days .
